Katke DOI : 10.9780/22307850, Published By : Laxmi Book Publication Abstract : The enzyme was extracted from leaves of beet root and obtained the best Chitinase at optimum extracting condition with water at 20ocfor 90 min .Chitinase from leaves of sugar beet was purified by( NH4)2SO4 precipitation 20 to 60 %.Further purification was carried by dialysis to minimize protein contamination. Dialyzed protein was further purified by DEAE-Cellulose anion exchange chromatography. A 16.6fold purification of the enzyme with 15 Imu/mg specific activities was achieved.
